Introduces various international cuisines and their ingredients, preparation methods and cultural influences. Provides further practical experience in preparing quality food, and practice in following standard recipes to prepare a variety of dishes with varying degrees of difficulty. Students work individually and produce their own work independent of others in the class. Emphasizes critical thinking skills as students evaluate their completed dishes. Reinforces proper kitchen procedures, care and use of equipment, sanitation, safety, cost control and efficient work methods.
